So, my love for all things strawberries comes from a sweet memory I have of my youngest son eating strawberry pie as fast as he could back when he was a little guy. He was six and we were at a 4th of July celebration at the park.

He was so excited when he got to be in the pie-eating contest!! He didn't win, but he sure had a fun time trying to eat that strawberry cheesecake pie as fast as he could. I have the sweetest memories of that day and of my son's cute face covered in strawberries and tons of whipped cream, smiling from ear to ear.

So yea, ever since that summer I have had an extra love for strawberry cheesecake desserts (with whipped cream, of course!!). 






Baked and no-bake cheesecakes both taste delicious. You just can't go wrong either way.

The main difference between the two is that baked cheesecake uses eggs in the recipe, while no baked cheesecake does not use eggs (because the eggs will not get cooked and would be raw.)

The eggs help give the baked cheesecake a firmer texture and a baked cheesecake will have a different taste than a no-bake cheesecake without eggs. 

Either way, you decide to make your cheesecake, they are both delicious, so no worries.

But cool creamy no-bake cheesecake desserts make perfect summer desserts that do not have to be baked in a hot oven. And who really wants to turn on the oven on a warm summer day?

Homemade no-bake cheesecake needs to be refrigerated for at least 6-8 hours to get firm. And it is best if you can keep your cheesecake in the fridge overnight for it to get firm. You want your no-bake cheesecake to be firm and easy to slice. 

If your cheesecake is not coming out firm enough after being in the fridge overnight, you can put your cheesecake in the freezer to help it set.

Some recipes for no-bake cheesecake use heavy whipped cream to get a firm texture, while other recipes for no-bake cheesecake use Cool Whip or sweetened condensed milk to add firmness.

For me, I like to use cream cheese (not the low-fat kind though, you need full-fat cream cheese to help your cheesecake have a creamy firm texture) and Cool Whip because it gives the cheesecake a smooth creamy filling that is firm so it slices cleanly when you serve it.

And many delicious no-bake strawberry cheesecake recipes will use Jello because gelatin helps cheesecake come out firm (as opposed to a runny cheesecake, which no one wants.) 

Plus, the jello also gives the cheesecake a nice flavor.
